چکیده
FRESH-CUT PRODUCE by ROBIN GWEN SALINSKY BROEKER (Under the Direction of Mark Harrison) ABSTRACT Foodborne botulism is a potentially lethal neuroparalytic illness resulting from ingesting C. botulinum neurotoxins. There is little information concerning the stability of preformed toxin on fresh produce. This research determined the stability of toxin type A on whole grape tomatoes, pre-cut lettuce, and pre-sliced cantaloupe. Different combinations of toxin inoculum pH (5.5 or 7.0) and storage temperature (4, 15, or 25C) were analyzed to determine their relationship to the rate of toxin decay. The toxin was measured using the DIG-ELISA method, which screens for the presence of botulinal toxin type A. For tomatoes, the toxin inoculum at pH 5.5 and storage temperature of 25C provided the most stability for the toxin. For lettuce, the toxin inoculum at pH 7.0 and storage temperature of 15C provided the most stability. For cantaloupe, only the temperature of 4C provided stability to the toxin.

Growth potential of Clostridium botulinum in fresh mushrooms packaged in semipermeable plastic film.
Fresh mushrooms (Agaricus bisporus) were inoculated in the stem, gill, or cap with Clostridium botulinum spores. They were placed with uninoculated mushrooms in paper board trays, which were then covered and sealed in a polyvinyl chloride stretch film to simulate prepackaged mushrooms available at retail stores. When incubated at 20 C, botulinum toxin could be detected as early as day 3, or 4,...
متن کاملEffect of acid and salt concentration in fresh-pack pickles on the growth of Clostridium botulinum spores.
The addition of various amounts of acetic acid to pureed cucumbers inoculated with Clostridium botulinum spores has shown that outgrowth is inhibited at pH 4.8 but not at pH 5.0. Inoculation experiments with whole cucumbers showed that as little as 0.9% acetic acid in the brine was sufficient to prevent outgrowth from spore inocula as high as 10(6)/cucumber. It was further shown that the rapid ...
متن کاملType C botulism due to toxic feed affecting 52,000 farmed foxes and minks in Finland.
The largest reported outbreak of type C botulism in fur production animals is described. Epidemiological investigation of 117 out of 157 (response rate, 74.5%) farms revealed that 44,130 animals died or were euthanized, while 8,033 animals with milder symptoms recovered. The overall death rate in all animals at risk was 21.7%. The death rates were significantly higher in blue and shadow foxes (...

The prevalence of Clostridium botulinum types A, B, E, and F was determined in 214 fresh fish and environmental samples collected in Northern France. A newly developed PCR-enzyme-linked immunosorbent assay (ELISA) used in this survey detected more than 80% of samples inoculated with fewer than 10 C. botulinum spores per 25 g and 100% of samples inoculated with more than 30 C. botulinum spores p...

In the past decade, outbreaks of human illness associated with the consumption of raw vegetables and fruits (or unpasteurized products produced from them) have increased in the United States. Changes in agronomic, harvesting, distribution, processing, and consumption patterns and practices have undoubtedly contributed to this increase. Pathogens such as Listeria monocytogenes, Clostridium botul...
